Getting Festive - Eggnog Muffins

Oh eggnog, why are you so gosh darn unhealthy? I'm a sucker for eggnog flavour, but I need a bit more of a nutritional reason to indulge in this treat. Since walnut is a superfood and whole wheat muffins are a great way to start a morning, I've found an eggnoggy way to make my Christmas mornings merrier!

Ingredients (makes 12):
  • 1 Cup whole wheat flour
  • 1 Cup all-purpose flour
  • 1 Tbsp baking powder
  • 3/4 tsp ground nutmeg
  • 1/2 tsp cinnamon
  • 1/2 Cup walnut, chopped into pieces
  • 1/3 Cup brown sugar
  • 1/3 Cup butter, melter
  • 1 1/4 Cup non-fat eggnog
  • 1 egg beaten 
  • 1 tsp vanilla extract
  1. Preheat the oven to 400F.
  2. Whisk all of the dry ingredients together in a large bowl, from flour to chopped nuts.
  3. In a medium bowl, stir the brown sugar into the melter butter, then proceed to whisk in all remaining ingredients.
  4. Stir the wet ingredients into the dry ingredients,  until well combined.
  5. Divide the batter amongst 12 muffin cups and bake for 18 minutes.
