Homemade Gifting - Candied Grapefruit + Syrup

I had some spare time on my hands this month, so I decided to go hand-made for some of my holiday gifting. Although I wanted to include a sweet component in my holiday bundle, I also wanted to include something appropriate to holiday drinks. After getting this idea for candied citrus peels and grapefruit syrup, I decided that these jarred beauties would do just the trick.

Ingredients (makes 4 servings):
  • 4 Medium grapefruits, peeled
  • 2 1/2 Cups of sugar
  • 2 1/2 Cups of water (+ more for boiling)
  1. Choose 4 grapefruits without any major imperfections, washes well, and peel the grapefruit into 1/2 inch strips, going vertical from the top of the grapefruit to the bottom
  2. Place the peels into a medium pot or saucepan. Cover in cold water, and bring to a boil
  3. Once boiled, drain the hot water, and repeat step two, four more times
  4. Drain the peels in a colander, and in the pot you were previously using, fill with 2 1/2 cups sugar and 2 1/2 cups water
  5. Once the sugar is fully dissolved into the water, add the peels and reduce to a simmer
  6. Simmer the peels until they become translucent
  7. Let cool, then divide among four mason jars
