Classic Bran Muffins


The kind of muffins that would make granny proud! I've made this recipe a handful of times, with both raisins and chocolate chips. It's my go-to morning classic.

Ingredients(makes a dozen):
  • 1 1/2 Cups wheat bran
  • 1 Cup buttermilk
  • 1/2 Cup all-purpose flour
  • 1/2 Cup whole wheat flour
  • 1/3 Cup canola oil (or unsweetened apple sauce)
  • 1 egg
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup raisins (or chocolate chips)
Instructions:
  1. Preheat oven to 375F.
  2. In a large bowl, combine the wheat bran and buttermilk, and let stand for 10 minutes so that the milk fully soaks into the bran.
  3. In a small bowl, whisk together the egg, oil or applesauce, sugar and vanilla. Once combined, mix into the wheat bran.
  4. In a medium bowl, mix all of the dry ingredients (flours, salt, baking soda and powder). Once well mixed, incorporate into the wheat bran mixture, then add the raisins or chocolate chips.
  5. Spoon the batter into muffin liners or a greased muffin pan, and bake for 15 to 20 minutes.
